A recent craving for chickpeas and quinoa together brought me to search the web for a recipe. I quickly decided on this one. Quinoa. Cucumber, Parsley, Chickpeas, Red Onion. Kalamata Olives. Feta. And a roasted red pepper sauce. This bowl of goodness has a Mediterranean twist.
The combo of ingredients here is very unique and light.
This could easily be made vegan if you remove the feta.
